Scarpinocc
Scarpinocc comes from the Italian word for “shoe” and that’s just what these little stuffed shells resemble. In this class we will dive deep into the history of this little shoe, which is an egg based pasta dough.
While you eat a sampling of freshly made scarpinocc, we will begin with a demonstration of preparing a portion of egg dough. From there you will dive into creating your own dough, kneading and resting before rolling out sheets to form your scarpinocc. All materials will be provided and you will take pasta home with you!

About the instructor:
Keeli Manning is an Ithaca native with over sixteen years of experience in catering, event planning & hospitality. Her years working in the natural foods industry was a foundational source of inspiration for finding her passion for farming, food justice, food sovereignty and clean simple ingredients.
Upon relocating back to the Finger Lakes from Philadelphia years ago, she started making pasta as a pandemic hobby which quickly turned into a passion and now a career. Founder + owner of Doomsday Pasta, she is committed to growing in her knowledge and sharing what she knows for an ever expanding community.
